Краткое описание

Ordinary idea of typical American food is explained by the fact that the advertized product pretty often is a fake. Americans uses special cattle for meat, this cattle is fed with grain, and it's not the same one, that is for milking. As a result the real American beef is more gentle and tasty than that, which is usually offered in Europe as "American steak". Potatoes sold abroad which are entirely baked in a foil are not the well-known potatoes from Idaho. It has other pulp and a peel that is explained by a climate and soil in this state. Or the favorite food of Americans on picnics — corncobs — in any way can't be compared to the preserved or frozen corn, being long weeks in a way.

The widespread point of view among foreigners that Americans eat only cheeseburgers, Coca-Cola and fried potatoes is true as well as the opinion of Americans that the food of British is tea and fish with potatoes, Germans eat beer and stewed cabbage, and French red wine and garlic.

Even such important thing as the American sauces for a barbecue differs from what stand on shelves of foreign supermarkets. Fine sauce for a barbecue from South Chicago has own sharpness and smack. Texans hold every year competition on the hottest sauce (recipes of production are kept a secret). And of Spanish-speaking communities of the Southwest of the USA are sure that their sauce the best. Besides, there are Californian wines which successfully participate in the international competitions. As it is accepted everywhere, the best wines are never taken out. The oldest corn or wheat whisky — the softest one which must be sipped — won't be offered to the first comer.

As for food, here America has two big advantages. First, as the leading agricultural country, it was always supplying the citizens with fresh meat, various fruit and vegetables at quite low prices. For this reason a beefsteak or roast beef is probably the most typical American food, because it was always the most available. But the good chickens fried on southern manners, the gammons sustained in sugar or baked on coal from a hazel grove, a turkey (some Americans would like to see her as a national dish), fresh lobsters, crabs, mollusks and other seafood are also a success.

With strongly different climatic conditions it isn't necessary to import such fruit and vegetables as fresh grapefruits, oranges, lemons, melons, cherries, peaches, cabbage of broccoli, avocado, lettuce and cranberry. That is why fruit dishes and salads are daily food. Family kitchen gardens were very popular as a hobby and as a way to save money in those days when the majority of Americans was farmers. It helped to have fresh food on a table. Kitchen gardens are so popular, that even "New Yorker" always publishes some caricatures connected with cultivation of zucchinis. It means that zucchini — one of the simplest vegetables for cultivation therefore everyone strives to feed more to the family, and attempts to put off one more it the neighbors became almost a national joke. In some areas where almost everyone catches fish, it replaces zucchini joke ("I caught and I ate"). The first fresh perches and mountain trout are very good.

Other advantage of America is that immigrants brought with them and continue to bring traditional dishes of the countries. A variety of dishes and ways of their preparation strikes. The Armenian, Basque, Catalan, Creole, Danish, French, German, Greek, Hungarian, Italian, traditional Jewish, Latvian, Mexican, Vietnamese or any other cuisine now became stronger in America. For a breakfast — roasted bread with cottage cheese a la Philadelphia, for a dinner — crackling taco with fresh salad and strong cheese, or full dinner beginning with sweet-sour dishes at the Chinese restaurant, also became typically American.

Today in America there are at least four tendencies, connected with products and a power

system. First, the number of inexpensive restaurants with house specialties increased. Among them there are such, that offer a wide choice of pancakes, various cold and hot breakfasts, and also buffets and the bars specializing on various salads. Secondly, the increasing number of Americans affords visiting restaurants. As a whole they aren't so expensive, moreover many Americans don't want to limit the life to kitchen. They prefer to pay to the professional cook and have a good meal. At the same time the number of men and women, for whom cooking is hobby grows. Everyday appears more and more television series which are propagandizing the various directions of culinary art. The good sales of cookbooks, and also increase in number of the shops selling the «exotic» kitchen equipment and spices say about the growth of popularity of cooking.

 

 

- Gumbo.

 

The third tendency is connected with national campaign fighting for human health. As a whole a diet of Americans is easier, than around the world. The vegetable food, fruit and vegetables, fish and salads prevail in it, overshadowing hard to digest food. The American won't refuse a good portion of meat and potatoes with a sauce, but aspiration to keep health and a good figure — not so temporary phenomenon in the United States.

And at last, in the USA international movement to the system of a fast food is presented by booths of pizza, hamburgers, the Mexican dishes, chickens, salads with sandwiches, seafood and a wide choice of ice cream. And though many Americans and not only they half-heartedly treat such tendency (so the restaurant owners do), people of all age and different prosperity continue to use such institutions, but maybe it isn't necessary to treat it too seriously? If the majority of Americans considers France as the heart of refined cuisine, you must not forget that there is also the biggest restaurant in the world is in Paris, and in fact its specialty is hamburgers.

From my point of view the cuisine of USA is interesting for cookery, as it has lots of interesting dishes, which you have never seen before. All our ideas of cuisine of the USA are subjective and are made up generally by mass media and its variations. 
 
I also need to say that American cuisine is not much more difficult than Russian. It has a certain specialty and it's cool!
